Hot Chicken Salad

From sweet Sara in Noblesville, Indiana comes this super creamy hot chicken salad.

So good…

4 diced cooked chicken breasts
1/2 C. cooked rice, brown preferred,
3/4 C Miracle Whip Lite
1 tsp chopped onion
1 tsp lemon juice, preferably fresh
1 tsp salt
1 can water chestnuts, sliced
1 can cream of chicken soup
3 hard-boiled eggs, chopped

Combine ingredients and pour into 9 x 13 baking dish, bake in pre-heated 350 degree oven for 35 minutes

Topping:
1 cup crushed corn flakes optional frosted flakes for a sweeter taste.
1/2 cup sliced almonds
1/4 cup melted butter, drizzled over top

Lovely dish. Serve with garlic bread and favorite beverage.

Greetings From Indiana

Betsy and I are spending a few days in Noblesville, Indiana, with my stepson and his beautiful girlfriend. We have gone to Bloomington today to buy discus fish.

The rest of the evening will be spent getting them acclimated to their new home, and we will spend a couple of days here getting the hatchery off the ground. We are very excited about this new venture…

Creamy Pistachio Pudding

Wanted to share this WONDERFUL, creamy, LIGHT, dessert recipe I made last night. This one will remind you of the old “watergate salad” from years back. This makes a huge bowlful and it’s a healthy dessert, without fat.

1 - 32. oz. carton Dannon fat-free plain yogurt
1 - 8 oz. Cool Whip Free Dessert Topping, thawed
1 - 17 oz. can crushed pineapple in natural juice, lightly drained
2 - boxes (small) Jello brand Pistachio sugar-free, fat-free Instant Pistachio Pudding

Mix all together in a large bowl and refrigerate!

YUM-YUM! This is a great Pistachio Pudding recipe…
