Thick & Creamy Potato Soup

From Sara Heiney in Noblesville, IN, comes this great recipe for potato soup. It is simple to make, and is great for a late evening meal, or when you need “comfort food.”
I have always liked potato soup - must be the Irishman in me! - and recipes that are quick and easy - and satisfying - are the order of the day in our household.
Try this with homemade cornbread, and a simple fruite compote to finish off…
THICK & CREAMY POTATO SOUP
(8-10) potatoes 6 T butter
1 sm. onion 6 T flour
1 pk. sm. ham cubes 1 t salt
1 1/2 c. milk 1/2 t pepper
Boil potatos, drain and save water. fry onions in butter, keep over heat, stir in the flour, salt, and pepper.
Slowly add the milk (stir till thick like gravy). add potateos and ham, mix well. then add water slowly till you get soup texture you want.
