Nathan’s Potatoes

My stepson Nathan, who lives in Grand Rapids, does the lion’s share of the cooking in his household. He has come up with some fairly decent recipes, and this is definitely one of them. Easy to prepare with standard ingredients found in any grocery, the meal is sure to please any person liking a big breakfast. It also serves well on a buffet when having guests over.

2 packages of “pre-shaped” hash-brown patty squares
2 box’s Philadelphia cream cheese
2 cans Campbell’s cream of mushroom soup,
3/4 large onion, chopped
salt/pepper to taste
8 oz package of shredded cheddar cheese.

Chop up the onions and saute in butter until soft and translucent.
Add the cream cheese and cream of mushroom soup, heat in skillet until it reaches a
liquid state.
Salt/pepper to taste… (consider adding a touch of garlic powder)
Let mixture cool for a few minutes.
Spray a 13X9 oven proof baking pan with Pam.
Layer the bottom with the hash brown patties, then layer some of the
mixture, then add another layer of patties, then more of the mixture, then
a 3rd layer of potatoes topped off with the rest of the mixture.
Bake at 350 degrees in pre-warmed oven for an hour, then add the cheese (cover w/ foil so it doesn’t burn)
Bake long enough for the cheese to melt fully.
Serve immediately.

BBQ MEATBALLS

During the summer months, and especially since we have opened the new brick & mortar, we are especially busy with activities, the kids, and summer outings. it seems we never find time to cook, and our health at our age begins to suffer. So, I am always on the lookout for “recipes in a flash.”

Here is a basic BBQ meatball recipe, and it is tasty and easy to prepare. Although I believe that meatballs should ALWAYS be cooked in the oven, this is an easy alternative.

I would suggest you spice it up to your taste, although it is quite good as is…

BBQ MEATBALLS

Prep and Cook Time:
22 min.

Ingredients:
1 lb. hamburger
1 cup minced onion
1 egg
1/4 cup milk
1/4 cup bread crumbs
1 tsp. salt
1/4 tsp. pepper
2 tbl. cooking oil
2 (8 oz.) cans tomato sauce
1/2 cup brown sugar
2 tbl. vinegar
1 tsp. seasoned salt

Directions:
Combine first seven ingredients and shape into 12 meatballs. Brown in oil in skillet, remove excess fat. Combine tomato sauce, brown sugar, vinegar and seasoned salt. Pour over meatballs. Simmer over low heat 10-15 minutes, turning frequently until meatballs are well glazed. Serve over rice or noodles.
