Huevos Rancheros
Tuesday, October 24th, 2006When my son Nick comes for the weekend, we always eat Mexican food. We both love the hot, bold, spicy taste of old Mexico, and it always goes good after a night of beers and good conversation. Nick was here this weekend, and I whipped up a batch of these great Huevos Rancheros for him when he finally crawled out of bed. I had as much fun making them as he did eating them…
Huevos Rancheros
4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Monterey Jack cheese
8 slices bacon, cooked and crumbled
1/2 cup salsa (optional)
Sour Cream for topping
2 tablespoons virgin olive oil
1. Heat oil in a small cast iron skillet over medium-high heat. Fry
tortillas one at a time until firm. Do not over cook. Remove to
paper towels to drain.
2. Meanwhile, combine the refried beans and butter in a
microwave-safe dish. Cover with Saran wrap and cook in the microwave until heated
through.
Fry eggs over easy in the skillet. Add more oil as needed.
3. Place tortillas onto plates, and spread a layer of
beans on top. Add the fried egg, crumbled bacon and salsa.
Top with sour cream. Serve immediately.
