STUFFED MUSHROOM APPETIZERS
The season is in full swing, with New Year’s Eve upon us. A dear friend used to throw one of the best New Year’s Eve buffets I have ever attended. We had a ton of fun, brought in the New Year with champagne, and had a lot of good things to eat. Following is a recipe she served for stuffed mushrooms. they are quick an easy to prepare, and are delicious!

STUFFED MUSHROOM APPETIZERS
20 large fresh mushrooms, stems removed
20 Ritz crackers, crushed
1/4 c. crumbled blue cheese
1/4 c. chopped green onions or chives
20 thawed sm. salad shrimp
Enough melted oleo to mix crackers,
blue cheese and onions
Stuff each mushroom. Add one small shrimp on the top. Drizzle with melted butter or oleo and microwave on high for 2 - 2 1/2 minutes in microwave dish.
